Oddity is better if you want to explore a lot and avoid fights (you only get XP for oddity items and quests). So you can focus on non-combat skills (at least early on) and still keep pace with combat oriented characters.

Higher end oddities are found in progressively more dangerous and hard to access areas, but most oddities can, technically, be obtained without killing enemies. To gain veteran levels, a character will require significantly more experience (both oddity and classical) than for regular levels.

Classic gives XP for fights, lockpicking/hacking, and quests. It rewards killing things. Underrail > General Discussions > Topic Details. “ You gain experience up by collecting "oddities" scattered across Underrail and by completing quests.

In Classic, combat XP is determined by your level in relation to the enemies - you continue to get XP, it's just significantly reduced if you're higher level.

Am currently doing my first ever playthrough of this game, and agonised over oddity vs classic when I started. Oddity is unique and it encourages you to explore rather than kill all in sight.

Why? For me it's oddity all the way, I did not even touch classical and do not intend to. The thing about Classic is that you can really abuse it by just slaughtering everything in the game. In this mode, you earn experience for completing quests and killing enemies.
